Course 02 · Advanced
Advanced AI in Education
Already using AI in your teaching? Go further: build, test and govern your own AI tools.
Dates 2026-27
Adrianou 4, Neo Psychiko, Athens · Monday–Friday, 09:30–12:30
About the course
What this course is about
You have used an AI assistant with your learners for a term or more. The prompting works; the harder questions remain. Can you build a tool that behaves the way your subject needs, every time? Where does the human check go once a tool starts acting on its own?
This course answers those questions by making things. In five mornings you build — and then break — your own subject assistant, design AI workflows with human checkpoints, train a simple classifier to see how skewed data produces skewed results, and judge real edtech products against the EU AI Act. You leave with a six-week pilot, ready to run. Cyberno works on digital safety and online harm prevention, so the week keeps returning to the learner behind the data.
What makes it different: it starts where Course 01 ends — you move from using AI to building, testing and governing it.
Who is it for
Educators who already use generative AI regularly, digital coordinators, ICT leads, learning technologists and academic developers.
Prerequisite: Course 01 AI Essentials for Teachers or equivalent — at least one term of regular use of generative AI and confidence with structured prompts. Monday offers a short refresher only. Bring a laptop and an account with one AI assistant that lets you create custom assistants.
Learning outcomes
What you will learn
By the end of the course you will be able to:
Build a custom subject assistant with instructions, knowledge files and guardrails.
Test it through "red-teaming", recording its failures and your fixes.
Design a multi-step AI workflow with a named human check before anything reaches learners.
Demonstrate an activity in which learners train a classifier and see how biased data leads to biased results.
Classify edtech products by EU AI Act risk level and ask suppliers the right data-protection questions.
Plan a six-week pilot with a baseline, an end measure and peer feedback.
Programme
Your five days
From user to builder
- Welcome, needs check and a short refresher: what has changed (reasoning models, multimodal AI, agents)
- Assistant workshop: build a subject assistant that asks questions instead of giving answers
- Red-team a partner's assistant
Workflows and agents
- From prompts to workflows: steps, human checkpoints and the risks of agentic tools
- Turning synthetic class data — never real — into accessible multimodal resources
How AI is built
- Train an image or sound classifier in the browser, then feed it skewed data
- Learners as critical AI users: routines, age limits and managed accounts
Regulation and cost
- "Regulator for a Day": high-risk uses in education, banned practices and transparency duties
- Data-protection impact assessment walk-through and the energy cost of AI
- Afternoon: study visit
Your six-week pilot
- Pilot design and peer critique in small groups; Cascade Pack
- Presentations, evaluation and certificates
Beyond the classroom
- Welcome dinner on Monday evening at a local taverna — included in the fee.
- Study visit on Thursday afternoon to an AI lab, innovation hub or edtech company in Athens, with a short debrief. Included in the fee; not counted in the 15 contact hours.
How we teach
- Hands-on building on your own laptop — everything you make is for your own teaching.
- Peer exchange with colleagues from other European countries, using real products and real regulation.
- An action plan that grows every day, plus a Cascade Pack: a ready-made 45-minute briefing for colleagues.
Certificate and follow-up
- Certificate of attendance listing the dates, the 15 contact hours and the learning outcomes.
- Learning outcomes ready to paste into your Mobility Agreement and Europass Mobility document.
- Online follow-up session (60–90 minutes) 6–8 weeks later, in the middle of your pilot.
